Fruit Ricotta Mousse
1 pound ricotta, whipped until smooth
1/2 cup fruit preserves
1 cup whipped cream
2 tablespoons honey
1 pint fresh fruit
Mint garnish
Whip ricotta until smooth; fold in preserves
to complement your choice of fresh fruit. Combine with cream whipped
into peaks, sweetened with 2 T honey. Refrigerate until chilled. Prepare
berries or mixed fresh fruit. Serve mousse topped with fresh fruit.
