Preserving The Harvest

Blackberry (or Raspberry) Cobbler
NOTE: DOUBLE THIS SIMPLE RECIPE AND HAVE ENOUGH FOR THURSDAY NIGHT SUPPER

Filling
6 cups fresh blackberries
1/4 cup sugar
dash of salt
2 tablespoons flour
1 teaspoon cinnamon
1/4 teaspoon nutmeg
Add to large mixing bowl and let stand while you prepare the topping.
Topping
1/4 cup flour
1/2 stick butter, soft
1/2 cup brown sugar
1/4 cup rolled oats
In a medium bowl, combine topping ingredients; place berries in a 9 inch square pan or individual ramekins and cover over with topping. Place in a preheated 350 degree oven for 30 to 40 minutes until filling bubbles and topping is golden brown. Serve warm or cold. Homemade vanilla ice cream is a nice topper.
