Apple Rice Pudding
1 cup basmati rice
2 cups apple juice
2 tablespoons butter
1 teaspoon salt
1 tablespoon lemon juice
1/2 teaspoon lemon zest
1/3 cup sugar
1/2 cup cream

Melt butter in pan with tight fitting lid, add rice and cook until slightly translucent, stirring constantly for 3 minutes over low heat. Add apple juice, lemon juice and salt. Cover and cook for time recommended on the package. Uncover; add sugar, and cream; stir briskly to combine, return to heat, bring to simmer and turn off heat. Do not remove cover until ready to serve.
