Apple Dapple Cake (s)
I usually make 3 batches all at once (mixing by hand) and bake them in small molds which yield about 8 (2 to 3 serving) small cakes to tuck into gift baskets and 2 medium size cakes (6-8 servings) for the dessert buffet table.
3 eggs
1 1/2 cups oil
2 cups sugar
2 1/2 cups flour
1 teaspoon salt
1 teaspoon soda
2 tablespoons vanilla
1/4 cup milk
1/2 cup flour
3 cups apples, cored peeled and chopped
1 cup black walnuts, chopped

In a large electric mixer bowl combine oil, sugar and eggs. Combine dry ingredients and slowly beat into the sugar mixture. Add milk and vanilla. Toss apples and nuts in 1/2 cup flour and add to the mixture, including any flour which does not adhere to apples and nuts. Pour into greased and floured tube pan and bake at 350 degrees for 1 1/2 hours. May be made in smaller molds or pans, adjust baking time. Remove cake from oven, remove from rack and place on cooling rack set in a baking sheet. Prepare topping and pour over warm cake.
Frosting:
Combine
1 stick margarine
1 cup sugar
1/4 cup milk

Boil 2 1/2 minutes and pour over warm cake.
This cake freezes well without the frosting. Bring cake to room temperature, make frosting and pour over cake. Delicious without frosting too.
