Turkey Pot Pie
Double pie crust
Cube 3 cups turkey dark meat
2 stalks celery, chopped
1 onion, diced
1 sage leaf crumbled
1/2 teaspoon fresh rosemary minced
1 (16oz.) can chicken stock
3 tablespoons butter
1 cup fresh or frozen green peas
In a saute pan, saute vegetables in butter;
push vegetables to one side, drain butter forward; add flour and cook
until lightly colored. Add stock and cook to thicken. Adjust seasoning
with salt and pepper..
Place bottom crust in a deep 10 inch pie plate. Place turkey and peas
in pie crust. Pour sauce over all. Add top crust, flute and vent. Bake
in preheated 350 degree oven for 30 minutes or until crust is golden.
