Huevos Rancheros
1/2 cup salsa
1 medium tomato, chopped
3 tablespoon fresh cilantro, chopped
4 medium or 2 large flour tortillas
4 large eggs, slightly beaten
1 teaspoon cooking oil
1/2 cup Monterey Jack cheese
Combine salsa, tomato, chopped, and chopped fresh
cilantro; simmer several minutes. Heat tortillas and keep warm
until serving. Lightly beat eggs; pour into slightly oiled, medium
hot skillet: lower heat immediately. When eggs are set on bottom, sprinkle
with salt and pepper and add cheese. Cover pan and cook 2 minutes.
Divide eggs among tortillas and add sauce. Serve immediately.
