Cheese-Veggie Strata
1 cup onion, diced
½ cup red bell pepper, diced
1 cup sliced mushrooms
2 tablespoons vegetable oil
4 cups Italian bread, cubed
1 cup grated sharp cheddar cheese
½ cup parmesan cheese, freshly grated
5 eggs
1 ½ cup milk
2 tablespoons mustard
½ teaspoon salt and freshly ground pepper
¼ teaspoon hot sauce
Saute vegetables in oil until soft
but not brown. Heavily butter the bottom and sides of ta 11-7 baking
dish. Combine eggs, milk, mustard, and other seasonings. Layer half
bread in bottom of dish and cover with a half of sauteed vegetables
and cheese. Repeat the layer. Pour egg mixture over all and refrigerate
at least 8 hours. Bring to room temperature and bake at 350 degrees
for 45 to 60 minutes until golden brown, puffy and done in the middle.
