Potato and Salmon Gratin with
Goat Cheese
1 large onion, thinly sliced
2 tablespoons olive oil
2 large potatoes, thinly sliced and boiled until tender
1 salmon steak (previously cooked)
2 tablespoons goat cheese
1/4 cup cheese
Caramelize onion, oil. Boil
potatoes and drain.
Alternate layers of onion and potatoes in buttered gratin dish.
Near the top, add pieces cooked salmon steak and dot with 2 T goat cheese.
Top with a layer of potato slices; add milk;
bake in 350 degree pre-heated oven for 20-30 minutes.
