Preserving The Harvest

Baked Apples
4 apples(Staymans are my first choice but Jonathan, Rome of Granny Smith will do just as well.)
1/2 cup raisins
1/2 cup walnut, chopped
4 tablespoons brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
4 teaspoons butter
1/2 cup apple cider
Core each apple and peel a strip from around the top. Place apples in a casserole dish. Combine raisins, nuts, sugar and spices. Stuff each center and top with a teaspoon of butter. Pour cider around apples and bake at 350 degrees until tender.
Serve hot or cold, as side dish or dessert. Top with whipped cream or ice cream. Great to prepare when you already have something in the oven at 350.
