Sweet Potato Biscuits
1 1/2 cup flour, sifted
1/2 teaspoon salt
1/4 teaspoon baking soda
1 tablespoon baking powder
1/3 cup Crisco
1/2 cup buttermilk
1/2 cup baked sweet potato
Combine flour, salt, soda and baking powder
and sift; blend with Crisco until the consistency of coarse meall Puree
together buttermilk and sweet potato. Stir puree into flour mixture
until dough stiffens; turn out onto a floured surface; knead 1 minute.
Shape dough into rectangle about 3/4 inch thick. Ct into squares 2x2
and place on baking sheet. Bake at 450 for about 15 minutes. Rub tops
with butter and serve hot from the oven.
