Light Rolls
1 package dry yeast
1/4 cup warm water
5 cups flour
1 tablespoon baking powder
1 teaspoon soda
1 teaspoon salt
1/4 cup sugar
1 cup shortening
2 cups buttermilk
Combine yeast and warm water, let stand 5 minutes.
Combine flour, baking powder, baking soda, salt and sugar in a large
bowl; cut in shortening until crumbly. Add yeast mixture and buttermilk.
Stir to moisten all ingredients. Turn dough onto floured board and knead
about 10 times. Roll out dough 1/2 inch thick and cut with floured biscuit
cutter. Place on lightly greased baking sheet about 2 inches apart;
cover and let rise at about 85 degrees about 30 minutes. Bake at 400
degree for 15 minutes or until lightly brown.
