Cornbread With a Zing
1 cup flour
1 cup cornmeal
1 tablespoon baking powder
1/2 teaspoon salt
1 jalapeno chili, minced
1/4 onion, minced
2 eggs, beaten
1 cup milk
1/4 cup cooking oil
Stir together all ingredients except
the oil. Heat oil in a straight-sided ovenproof skillet until it is
very hot. Pour batter into the pan and bake in a 425-degree oven for
20 - 25 minutes or until a broom straw comes out clean. Makes 8 to 10
servings. Divide the recipe and cook in a small skillet or cook the
full recipe and toast the cornbread to serve with another meal.
