Cornbread with Cheese
1/2 cup flour
1 cup yellow corn meal
3 teaspoons baking powder
1 teaspoon salt
1/2 cup cheddar cheese, grated
1 egg, beaten
1 1/2 cups milk
4 tablespoons melted shortening
Heat a 8 inch skillet and add shortening. Combine
flour, corn meal, baking powder and salt; combine egg and milk; stir
liquid ingredients into dry ingredients just until mixed. Pour immediately
into hot (nearly smoking) shortening and bake at 425 degrees for about
20 minutes. Bring to the table is skillet and cut in wedges to serve.
