Basic Biscuits
See variation for cheese biscuits.
3 1/2 cups biscuit flour ( I use White Lilly)
1 teaspoon salt
4 teaspoons baking powder
1 teaspoon baking soda
1/2 cup shortening (I use Crisco or butter)
1 1/2 cups buttermilk

Variation: Add 1/3 cup grated sharp cheese ( I use Canadian Cheddar)
Add 2 tablespoons fresh herbs, minced
Combine dry ingredients, cut in shortening, add cheese, pour in buttermilk and stir until combined. Knead on generously floured board gently for 5 or 6 turns. Pat the dough out to between 1/3 and 1/2 inch thick, cut with floured biscuit cutter, bake in 450 degree oven for 10-12 minutes. Serve immediately or cool completely, double wrap and freeze for later use. This recipe will make 3 dozen 2 inch round biscuits.
