Aunt Molly's Biscuits
3 cups flour (White Lilly, preferred)
1 teaspoon salt
4 teaspoons baking powder
1/2 teaspoon baking soda
2/3 cup lard or solid shortening (Crisco, preferred)
1 1/8 cup buttermilk
1/4 cup flour reserved for rolling
Sift dry ingredients into a bowl, cut in shortening, stir milk into dry ingredients until it become thoroughly incorporated and starts to become stiff. Turn dough out onto floured board and sprinkle with flour. Knead 4 or 5 times. Roll out to 3/4 inch thick and cut with 3 inch cutter dipped in flour. Lightly prick the top of each biscuit with a sharp tined fork. Bake in 450 degree oven for 12 to 14 minutes.
