Stir Fry Beef With Scallions
1 ½ pound beef sirloin, cut into 2 inch strips
1 tablespoon fresh ginger, grated
1 clove garlic, minced
3 tablespoons sesame oil
2 bunches scallions, thinly sliced
4 cups romaine, shredded
2 tablespoons peanut oil, 1 tablespoon soy sauce
2 tablespoons rice wine vinegar
1 teaspoon sugar
Salt and pepper
Marinate beef in ginger, garlic and sesame
oil. In a hot skillet or wok, heat peanut oil, cook beef one minute,
add soy, vinegar, sugar, salt and pepper and cook 1 minute longer. Stir
in scallions and lettuce and cook for 10 seconds. Serve over rice.
