Preserving The Harvest

Chicken Fried Steak and Gravy
2 pounds round steak, chopped to tenderize, cut into serving pieces
1 cup flour
3 tablespoons sugar
1 tablespoon Cajun seasoning
1/2 teaspoon pepper
1/2 teaspoon salt
1 tablespoon baking powder
1 beaten egg
2 cups milk
2 cups oil

gravy
3 tablespoons flour
3 tablespoons oil
2 cups milk
Salt and pepper to taste

Have butcher run round steak through chopper once to tenderize. Cut into serving size pieces. Combine sugar, Cajun seasoning, salt, pepper, baking powder, egg and milk to form a batter. Heat oil in deep skillet or Dutch oven to about 350 degrees. Dip meat into flour, then into the batter and into flour again. Place in hot oil to fry until golden brown, 8-10 minutes. Drain steak on brown paper, place on warm platter and pour gravy over all or serve on the side (which I prefer).
Gravy: Make roux by browning 3 T flour and oil, add 2 c milk, salt and pepper to taste, bring to boil and thicken.
