Beef Fajitas
Marinade
1 clove garlic, crushed
1/8 cup lime juice
2 teaspoons cumin
2 tablespoons olive oil

Fajitas
1/2 red, yellow and green bell peppers, cut into strips
1 large red onion, thinly sliced
10 cherry tomatoes
1/2 pound skirt or flank steak, cut into 1/2 inch strips
1/8 cup lime juice
4 large flour tortillas
In a large bowl, whisk together garlic, lime juice, cumin, olive oil. Trim 1/2 pound skirt steak into long thin pieces; marinate steak overnight and grill. While the steak is grilling, saute bell peppers, red onion and tomatoes in a large skillet. Add grilled steak to skillet and add lime juice to all. Serve steak and veggies in the skillet at the table, fill warmed tortillas with fajitas and garnish with guacamole and salsa.
